create contact does not work

Open the message, right-click on the "From" field and "Add to Outlook
Contacts" appears as part of the drop-down menu.

It seems to work only when the complete email address appears instead of just
the name. Outlook Express seemed to find the email addres "under" the name.
Can this happen with Outlook?

Nope, mine seems to work if there's just a name.
