In addition to a sent mail folder, could outlook operate like gmail and have
emails which have been responded to come up as a 'conversation'
pretty neat way of tracking replies and conversations

Probably not since Outlook is not gmail. However, you can play around with
the "by conversation" view to see what is possible.
