If I add a new contact's mailing address the layout appears in the following
format:

41 Some Street
ANYTOWN, Shireshire AB11 9TY

How can I format it as follows:

41 Some Street
ANYTOWN
Shireshire
AB11 9TY

TIA Jerry

Appears where?
I have no idea to which view you are referring or what you are trying to do.

If I open a contact and click on the "Address" button a "Check Address"
Window opens, I fill in the details and click "OK", the details then appear
in the address window of the contact but in the wrong format (I refer to)

That view cannot be configured, nor is there any need to in that view.
Address Layout is configured at the time you view or print your Contacts.
