Configuring The My Documents Folder

I use the My Document folder to create shortcuts to my data. I don't
actually use the My documents folder for saving data. However, it
seems when I run programs (now sure what, or how) new folders keep
appearing in My documents folder. Some are Adobe folder, sometime the
My Pictures appear, etc.. Is there anyway so only the folders
(shortcuts) I want in the My documents folder are the ones that I see
and not have new folders automatically be created.

Nope - it is a WindowsXP default system folder. You cannot rename it nor delete it
If you delete it XP will recreate a new one. There is a tweak in the Registry yo
can change but that is not recommended.

As was stated, my pictures, my music, etc. are system folders & cannot be deleted. Their location
can be altered via TweakUI or right-click -> drag -> 'move here'.

Another option would be to use the 'attrib' command in a command prompt window to set the hidden
attribute & then set explorer view options to not show hidden files and folders.

You are going to get such folders put in it. You can move some (My
Pics, My Vids My Music) out to elsewhere, using TweakUI, but others like
the Adobe are going there no matter what. I would approach this by
having some other home for your shortcuts; even if you just make a
Shortcut folder inside My Documents
