Column format from text to popup menu?

In my Task view there is a column for Categories. Right now its in text
format, with just a field to enter the category by hand. I want to change
this to a popup menu format so I can simply select a name from a predefined
list. I don't see an option to change this format. Is it possible to use a
popup menu instead? How do I do it? The format options for this column is
limited to just text, from what I can see.

No. You'll need to right-click the item in question and choose Categories.

What doesn't work for you? The right click menu on an item in Outlook has a
Categorize option.
