Cleaning Folders While Disconnected from Exchange Server

If I clean folders while my company laptop is disconnected from the company
exchange server (which I can do), when I reconnect to the company exchange
server is all of the junk that I cleaned going to reappear in my laptop
Outlook?

No, when you reconnect to the server, the folders will be synchronized and your deletions should be pushed up to the server.
