Changing the form of received messages

When I get a message and open it I can't edit it directly unless it is a
rich text.

I'd like to add notes to the received messages and save them no matter
what form they come in (rich text, HTML, simple text).

How can I change the form of an open message to rich text to be able to
edit it?

If you open an item and go to the Edit menu and choose "Edit Message", you
should be able to add what you want.
