caption numbering - how can I override to skip O

I need to skip Appendix O, but using the insert caption tool, it marches
straight throught the alphabet. How can I over-ride to skip the O? I've
tried section breaks because that trick helps me force page numbers, but
doesn't work on captions.
 
Good trick, thanks. The only problem with that is that in this particular
document I have a table of contents and it leaves a gap between N and P. But
I don't need to solve that today. Your trick is good enough for what I'm
doing. Thank you very much.
