How can I find out the exact BIOS that I have so I can be sure to get
the correct BIOS update.
I have an HP Pavillion 533w with a Celeron 2GHZ proc.
Motherboard = ASUS P4G533 chipset = ASUS 82845G/GL/GV Brookdale
BIOS = AWARD software 3.2 2MB FLASH EEPROM

I tried pressing Pause during startup to no avail. Is there another
way to get the serial # etc. on screen or do I have to physically open
up the case and look on the chip ?

Try [Control]+ instead.

As HP frequently modifies hardware released with their systems, you should
get any BIOS updates directly from them.

Others have provided advice, and the best advice was to look to HP as
source for BIOS updates.

Back one step: are you clear about your reason for upgrading the BIOS?
Is there a particular reason? If it's "just to get the latest" ... I
would recommend you reconsider. Don't upgrade anything, especially
BIOS, unless you have a specific reason.
