What is the recommended amount of memory(RAM) for Windows 2000 Professional?

My system currently has 64MB of Memory(SDRAM), Windows 2000 Professional,
Intel Pentium 2-- Partition 1--NTFS
Its a Dell Optiplex GX1 350+
The maximum it can hold is 700 MB.
The system is so slow that I think I need to upgrade memory.

Also, does that mean I have to install the correct amount of recommended
memory, or I can buy more than that?

You're probably paging a lot right now. If you can go up to 256 mB (or more)
it will make a world of difference.
