I know that Vista will be available in bot 32 and 64 bit versions but
when I look at the stores that allows pre-order it's only the OEM-
versions that specify whether they are 32 or 64 bits.

Does that mean that I'll be able to install both versions from a retail
disk? And if so, will I be able to change version (say that I install 32
bit first but later changes my mind and reinstall with the 64 bit version)?

You can use 32bit or 64bit with the product key that comes with the retail
edition, but not both. You can install the one of your choice and you can
change your mind later by uninstalling one and installing the other. To use
both at the same time you need to purchase an additional product key.
