Does anyone know how to create an AutoOpen macro that would update styles
("automatically update document styles" setting) if the document
variable/property is in Draft mode but not if it's Active?

I expect someone probably does, but I expect that you may be more likely to
find such a person in a Microsoft Word newsgroup than in a Microsoft Access
newsgroup!
