When I open a document containing a large number of fillins I have to close
or cancel every last bloody one of the boxes before I can get out.

What's a shortcut to exit a "fillin" sequence and close the doc?

Please answer, if you can to (e-mail address removed).

Thank you very much.

Hi =?Utf-8?B?SiBBdXRyeQ==?=,

That depends on exactly what you've got. Fillins shouldn't execute when you
OPEN a document, unless there's a macro forcing the field updates. And if
that's the case, it will depend on how the macro is making the call. It would
also help, in this scenario, to know which version of Word you have.

Fillins will display when you create a NEW document from a template. In this
case, there's no possibility to break the sequence, although you can press ESC
pretty quickly :-)
