You don't. That's a downgrade, and MS does not support downgrades.

The only way to do it is to delete everything (or at least the OS)
from your C:\ drive and install Win2K from scratch. You'll need to
reinstall all your apps.

Yes, you can do a dual boot. However, you need extra software to achieve
this, because Microsoft does not support this.

Also, unless you know what you're doing, this procedure is not really
recommended. It can however be done with Powerquest's PartitionMagic and
BootMagic.

If you could throw away XP, it's much easier. Just start Windows 2000
setup, either from the CD, or from floppy disks. When it comes to
choosing a partition to install to, take care. Delete the Windows XP
system partition (probably called C:). If additional parttions exist,
you may leave them. Now install Windows 2000 onto the empty space just
created. Then proceed to reinstall apps. If before starting this process
you've saved any useful data to another partition, then you will be able
to get to that data again afterwards. So if you want to rescue any data
from the XP installation you need to consider carefully before starting
this.

Or unplug the drive with XP on, plug in a new one (about $80, this
month), install 2k, and then put the XP drive back and set it up to dual
boot (assuming that's what the OP actually wanted). This at least gives
you a fallback, if things go pear shaped, whereas deleting XP is kind of
terminal.

I can't imagine why someone would want 2k though - XP is just Win2k.1,
afaict, and most of the 'extra bugs' are pretty minor.
