You open files (whether attachments or not) in an application. You can't
open files in Windows, which isn't an application. Presumably you want to
open the files in some application other than Photosop.
For each file type (the extension--the last three characters of the file
name, after the dot, such as .txt, .doc, jpg, etc.) there is an
"association" set up within Windows. The association links the file type to
a particular application, so that when you double-click a file of that type,
it opens in that application. When you installed Photoshop, it changed the
association for a number of file types. Presumably what it changed was
associations, not for all file types, but just for graphics file types. If
you got a .txt or .doc attachment, Photoshop wouldn't try to open it.
You can change any associations you want to, but the first step is
recognizing what file types Photoshop is associated with, and what
application (agian, *not* Windows) *you* want to open them in. Go to any
file on your drive of the type you want to change the association for,
right-click on it, and choose "Open with." Select the application you want
to use for this file type, and check the box "Always use this program..."
Repeat that procedure for each file type you want to change.
