Windows Mail sends giberish or blank

I have just moved to Vista and Windows mail from XP and Outlook

Often we are sending e-mails but the recipient says they have eiher recieved
a blank e-mail (no tert) or the text is gibberish or the text has turned to
Chinesse (or Japanese) characters

Any ideas whjy and what we can do about it?
 
Does this happen with all recipients or just one?
Does it happen when you send an email to yourself?
