Unfortunately 'previous versions' does not apply to Vista Home versions,
only business and ultimate. You didn't specify your system but that is
probably why you cannot find the tab.
Interestingly on my system (Vista Home Premium) I CANNOT delete the last
calendar. If I add a calendar then I can delete the original (at least the
option is offered, I did not actually do it). Also it requires me to
acknowledge the delete with a warning box.
Are you sure you actually deleted it, perhaps you just unchecked it (that
does not require a confirmation warning on my machine)?
Also for reference, the calendar files are of type *.ics, under .../Windows
Calendar/Calendars you can try looking for anything with that extension.
(another good example for soapbox about backups. but you are probably not in
the mode for that).
Sounds like you are hosed however, bummer.

I'm surprised that I was able to delete everything on one click,

else on Vista asks you at least twice so my errors are rare!

Go there and:
- right button on Calendars and properties,
- Previous Versions tab
- select version before accident
Here you can try restore if you can't any data in existing calendar.

I mean that I could set up a number of calendars in Windows Calendar -
but
in
fact I only have set up one, that I use for everything. I have deleted
this
one!
I could set up a new calendar amd might have to if this one cannot be
recovered, but I would much prefer not to have to to this.
It's not in my recycle bin and I have searched the computer and can't
find
it. It seems odd that I could have so easily deleted it and there is
no
obvious way of recovering it.

You deleted settings from:
C:\Users\Marcin\AppData\Local\Microsoft\Windows
Calendar ?
Did you check recycle bin ?
