Why is Outlook not using my default email to send?

I've got multiple email addresses set up but have specified one as the
default from which I would like email to be sent (usually). For some reason,
when I look in the sent folder the sent from line reads one of the other
email addresses. How can I control this feature?
 
Unless you manually change it from the Accounts list, replies & forwards will
always use the acct the email was sent to.
 
This is not with respect to email replies. I am having this problem when
sending new messages.

What version of Outlook?
 
I've recently switched to XP because I got a new laptop. I've been using 2000
for years and never had this problem.

There was something funny that happenned when I was setting up the accounts:
It seemed like not everything was being shown on the accoutn list. (like I
had added accounts more than once). When I tried to add an account but got
interrupted, when I tried to resume it would tell me that I had already set
up that account, even though it didn't appear on my list. ?..,?...

Have you encountered anything like this?

Do the "2000" and "XP" in the above sentence refer to the Windows version or
the Outlook version? The latter is what I wish to know, not the former.

No, I haven't. Start with a clean mail profile (Control Panel>Mail>SHow
Profiles>New) and set up your account(s) again.
 
I haven't had a chance yet, but I'm planning on doing it as soon as I get a
moment. Probably Monday morning.

I'll let you know if it works.
