Why do my font styles and sizes keep changing?

I am typing an antique court document that has 3 different font styles and
sizes. When I change over to the next font, Word wants to make me keep either
the size of a previous font (with my NEW font style) or the old font style
with the new SIZE. What do I need to disable to be able to type manually what
I want when I want it?
 
You could create three Character Styles, and then rather than changing
both font and size every time you switch, you could just apply the
three Styles in turn.

A way to get to the New Styles pane is through the Styles & Formatting
pane (Ctrl-Alt-Shift-S), and then Word2003 and Word2007 are slightly
different in how to proceed.
