Why are documents larger when saved under office 2003 ?

Since upgrading to Office 2003 any previous document which is amended and
saved is now significantly larger. Why ?
 
Because every successive version of Word adds more bells and whistles, and
the hooks for these get dumped into the document (Smart Tags, for example).

Since upgrading to Office 2003 any previous document which is amended and
saved is now significantly larger.
This could be an indication that the documents' structures are damaged. If
Word can't read some of the structures correctly (numbering lists, for
example) it tries to resolve the problems using additional structures.

You might try round-tripping to Word XML or Web Page file formats (Save As,
close, re-open, Save As back to *.doc) and see if that cleans out the
accumulated junk.
