where is enable deleted items retention?

We are trying to restore deleted messages from Outlook. They were deleted
from the Deleted Items folder. We run Exchange 2000. But I do not know
where to start on the Exchange to try to recover and view the deleted
messages. THANKS!
 
Recovering deleted items is a two stage thing (by the way, I'm using
Exchange 2003...

Stage 1) Configuring the server - See
http://usdt.mylivevault.com/webhelp/TSK/bk_exchange_2K_exch.asp for a pretty
good explanation on how to enable deleted item retention.

Stage 2) Once stage 1 is done, any user should be able to open Outlook, go
to the deleted item folder and then select Tools > Recover Deleted Items to
pull back items that where deleted from this particular folder. (This only
works against the Exchange mailbox.)

Task for you, search google for the term "outlook dumpsteralwayson" and take
the link to microsoft support article 178630. Implement this registry key
and you should notice that you can access the hidden retention area for any
folder in the Exchange mailbox. (This is used to recover items that the
user selected SHIFT + Delete to bypass the Deleted Items Folder.)
