Howdy,
I would like to adjust settings in Outlook without
going into the menus to change them. I.E. Outlook
Profile Specific settings. - Personalized Menus and
Toolbars. Where are such setting stored. They are not
stored on the exchange server. Where are they stored on
the local computer?
Any insights would be appreciated.

They're in your mail profile. What is it you're trying to do?

.
Hello,
I am trying to set it so that full menus always show,
so that the Outlook address book will always be set to be
Last Name first, I am trying to set it so that spelling
is always checked. These are not the default settings in
a default/new profile. How do I get these setting
adjusted in the default profile so that I don't have to
set them each time? Where does the 'profile' get
stored? How does one manipulated outside of the menus
available in Outlook?

Are you logging into multiple computers? If so, and you aren't using roaming
profiles, your mail profile isn't going to follow you around. However, on a
single computer, once you set what you like, it should stick. Look into
implementing roaming profiles if you want this and other settings to follow
you around wherever you log in. The profile is stored in windows, but if you
have a roaming profile specified in your domain account properties, it gets
copied up/down wherever you log in. Just don't log into two computers at the
same time w/the same account - the 'last one out wins', w/r/t profile
updates.
