What kind of Processor do I have?

Accoring to the description I found on the product website, I have a
1.73 GHz Intel® Centrino™ Mobile Technology featuring Intel®
Pentium® M Processor 740 processor. Is this 32 bit or 64 bit?

The datasheet above says IA32, so your processor is a 32 bit processor.

If I look at a Core2 Duo and its characteristics, it lists
"Intel EM64T", which is what you'd want for a 64 bit instruction
set. This is a datasheet for a Core2 Duo.
