What files to back up Outlook?

I'm trying to back up my Outlook folders - Inbox, Sent Mail, and personal
folders. What files do I look for on my computer to do this?

I can't seem to find my .pst file. I'm on a networked machine at my
workplace, with Win2000 and OL2000 loaded on my machine. I know we have
centralized servers somewhere for email, but I don't know enough to know
what's saved on my machine and what's on the servers. So is there a good
chance my .pst is on a remote server?

If your mail is stored on a mailserver you should not be bothered about
backing up your data as your admin needs to take care of that. Otherwise see
the Exchange part in the link I gave you.
