With previous versions of Outlook (or Outlook Express), if I saved a few
files, reinstalled windows/Outlook, and then replaced the files old e-mails,
contact lists, etc. would still be there. Having recently had to unexpecedly
wipe my windows drive I did not have a chance to export my e-mails, yet was
able to make a copy of my C: drive, and am hoping I can still simply find and
replace a few files to get my old e-mails back. Is this possible?

Make certain that you can view hidden files on your backup, then do a search
for .pst files. That/those file(s) contain your mail, contacts, etc.

Email Client: Microsoft Office Outlook 2003
News Client (Text): Forté Agent 2.0 www.forteinc.com
News Client (Binaries): News Rover 10.0 www.newsrover.com

Found the specific file, for any others who are curious about this:

C:\Documents and Settings\USERNAME\Local Settings\Application
Data\Microsoft\Outlook\Outlook.pst

Copied this one file and all my e-mails, contacts, etc were there the next
time I opened outlook, just needed to set up the mail account again with my
ISP.
