What are services & should they be deleted?

The Old Timer

I downloaded a file from Packman Portal which tells me what all of the
Startup files are & whether or not I really need them. While doing this I
notice that there is a second list called services which is even longer than
the startup list. What is a service? Is there a similar list of
unnecessary items that can be deleted from this area as well?

There are also applications that AREN'T services that startup when you start
