Using proper name in From: field...

Is there a way to configure Outlook so it uses the sender's full (proper)
name as opposed to their e-mail name and address? I would like people to
receive emails from my name not name@domainname

Nice of you to explain to everyone that it has nothing to do with the "From
field" at all. The setting is specified in the settings for your email
account.
 
How do I select among various return addresses that I have which one is
chosen and the "sent from" one when I compose a new email?

You don't select "return addresses."
You select the sending account. The reply address is a property of the
account.

You should have posted a new question for this. But you choose which Account
to send from in the accounts list in the new message or it will be sent from
the default acct. Each address must be set up as an individual acct in
Outlook.
