when you go to the control panel and look at user/profiles
are some of them created by the system? or do they all
have to be created by the administrator or someone having
access? - I've noticed a few user accounts that I DID not
create? one of them says it's for anonymous internet
access? Please help as I did not create or set these up

Yes, some of those are created by the system. You might
want to look on www.technet.com or www.google.com for more
detailed info.
 
The anonymous internet access account will have been installed by Microsoft
IIS server (if you have this installed (only on xp pro))
