Track and save changes to records

I need users to edit certain fields in records, but I also need to keep the
version of the original record in the table. I made two copies of the table.
One is connected to a form for editiing. When a record has been changed, have
tried to use a union query, but then I have to run a make table query out of
the union and I am trying to avoid that. Is there anyway to append changed
records ( as a new record) to an existiing table? Currently my application
put a timestamp on each record when it was created and when it was last
edited.
