"To:" field showing email address

I have just updated to Office and Outlook 2003. Now, when I select a person
to send an email To--their name as well as their email address appears on the
email. How do I get it to just show the Name of the person as I have it
entered in my address book?
 
This is the default behavior in Outlook 2003 because users requested it.
You'd have to manually change the Display As field to change it back to the
old style.
 
Do you have to do on EACH contact or is there a setting to do so universally
for all?

You'd need to do it for each Contact.
The Display Name is of so little consequence that there has been no need to
create a utility to change it globally.
