time & date display viewing properties

Is there a way to change the taskbar to show the full
day, date and time without having to move the pointer
over the time?

You can customize how it shows in the control panel/regional and language
options/Regional options/"customize".

To show more than the default viewing however, you need to right-click the
taskbar and uncheck "lock the taskbar", then stretch it upwards by
right-clicking and dragging it.
