When using system restore can I set up a new restore
point in the past and if I can what would be the
terminology? What I am asking is if I want to restore
from a specific previous time(yesterday at 8 a.m.) can I
do this or only set up a restore point at the time I am
doing the task,

You can only create one as of 'now'. There is no way for the system to
know what the state of the machine was at sometime yesterday, other than
by there being a restore point for then already. So you need to be sure
you have a point conveniently before doing any major experiments.
Installing software will often make one for itself - but some things
don't, like some windows updates
