Can anyone tell me why I've all of a sudden started
getting the message "Requesting Virus Scan" at the bottom
of the Excel and Word application window on startup and
the applications take a long time to start up (minutes)
instead of seconds just a few days ago. I've racked my
brain trying to figure out what has changed on my system
from a few days ago to now and have been unable to find
any help from the MS website or online help.

Why does application startup take so long now and how can
I fix it?

You have change the settings of your Virus Scanner or install one

For: Norton Anti Virus

You can disable the scan in Office if you want.
I disable it also.

Look in the Options of NAV

We have about 30 pc with this setup and about 70% started suffering from this morning. I have contacted Norton as I believe it is a fault of the antivirus software (you will notice Norton is very slow to react as well). I will post any findings here if I find them. As the other person said, you can disable the office plug-in for the time being under the Norton options, miscellaneous section.

But can someone explain the sudden slowdown?

Just got through to Norton, as I thought they are now aware of this problem (they where not on my first call this morning). The situation can be temporarily rectified by opening up your browser. Going to tools/options/advanced then scroll down to security and uncheck the following 2 box's if they are checked.
Check for publisher's certificate revocation
Check for server certificate revocation.

Re-boot your computer and life is good (but less secure then before).

This was caused by an update in virus-scan
