Specify which email account to use in Microsoft Outlook

I have 3 different email accounts that I use. When I Create a new message it
sends from my *default* account. This is not always the account I want to
send from.
I realize there is an option to choose another account with a drop down menu
... but I always forget to use it. Invariably the email goes from the wrong
account.
Can this be programmed so I don't have to remember to manually change the
account every time? Is there a way I can tell it which one of my 3 emails
accounts to use every time I email that particular person?

Post all replies to the group to keep the discussion intact. Due to
the (insert latest virus name here) virus, all mail sent to my personal
account will be deleted without reading.
