Single space between paragraphs, they show up as quadruple space

I use Microsoft Outlook and Word 2003. When I compose emails i double space
between the paragraphs. When the emails are delivered they show up in the
recipients box as double double spaced between paragraphs. I use word as my
text editor. How do I resolve this issue? Do I resolve it with Outlook or
Word?
