When entering a control on a form, how can I select all the existing text
when entering instead of the cursor appearing at the beginning of the text?

If you want this to happen by default for all controls, you can set it
in the options: "Behavior Entering Field", on the Keyboard tab of the
Tools ->Options... dialog. Otherwise, see Amy Blankenship's reply.

Thanks
