Windows seems to have taken nearly 500 screenshots over the course of a year
and is storing them in the C:\Documents and settings\"Username"\Temp folder.
Why is it doing this? How can I disable this? I'm worried that this may be
a worm.

The exact location where the screenshots are stored is:

C:\Documents and Settings\"Username"\Local Settings\Temp

You can delete the content of the Temp safely, what you mean by screenshot,
is it a copy of your files/folders or Browsing habit, it is normal for the
temp to make copy for every File, website you visit if you didn't clean up
over the time.
You can run disk clean and delete the Temp here in this path:
C:\Windows\Temp\TemporaryInternetFiles = Delete all sub-folders here.
Also scan for malwares and Viruses with an up2date software, you don't need
to wait for somebody to tell go and scan you should do this on regular bases
to make sure all current and clean.

I do not mean a copy of the websites I have visited. I mean an image file
that is a screenshot capture of my desktop at that point in time. Some are
screenshots taken when I'm in the middle of instant message conversations.

Screenshot = a picture of everything that is on the screen.

Does windows do this or is this some type of spyware/virus that is embedded
in my computer?

I have windows, it does n't do such a thing unless you press ALT +Pint
Screen and you will find them in the clipboard.
If you have Anti-spyware and Anti-Virus then scan and make sure all clean.
Download these tools and see what running in the background:
Download FileMon or Process Monitor and see what running in the background,
you need to scan your system for viruses and malwares if you have softwares
up2date.
