does anyone know how I change the size of screen display inWindows Mail, to
make it bigger?

You mean, the Windows Mail window is only using a small part of the
display screen? Like in any Windows program, grab the edge of a window
with your mouse cursor and drag the window edge to where you want it.

Choose Windows color and appearance.
Choose Open classic appearance properties for more color options.
Click Advanced.
In the item box scroll down to and select Icon.

In addition to the suggestions posted by Frank, you can also increase
the size of everything (not just Windows Mail) by increasing the dots
per inch (DPI) of your Windows display settings.
Right-click on a blank spot on your desktop, Personalize,
Adjust Font Size (DPI), Custom DPI. Don't go much above 110%
or you'll have other problems.
 
I cannot see the option to increase font size!!

For some reason I failed to guess that "increase font size" = "Adjust font size (DPI)".
