How do I schedule my computer to preform a defrag on my C
drive at night time when I am away from my computer?

Control Panel>Scheduled Tasks - Add Scheduled Task - Next>Browse to %SystemRoot%\System32\dfrg.msc. You will need a valid password for your account so that the Defrag will run.
 
I had tried what you suggested but the defrag menu just
came up on the screen without starting to defrag the
computer.

Charles,

That's because the gui interface to the built-in defragmenter can't be
scheduled. You need to schedule the command line interface - defrag.exe
