I am interested in scanning my employee records and saving
them on my computer. what programs should I use to be
able to edit the files on my competer?

Most scanner also provide software to drive the scranner and create the
graphics file which are basically a "picture" of the paper. Some of the
better scanners also provide OCR (Optical Character Recognition)
software which scans the "picture" and converts the text in the picture
into editable text files.

You can use this hardware and software to do as you describe. You can
also purchase high-quality software that does scanning and OCR "better".

That being said, depending on the nature of the text on the paper, the
computer will do a variable job of getting the text into a form which
can be edited. If it's simple text (like a book), today's OCR software
probably can do a reasonable job with few errors. If it's forms which
lots of extraneous stuff, the OCR software is likely get confused and
not give the results you expect.

It's variable. You need to experiment a bit.

Just curious. Why would you want to edit "records". Aren't records
supposed to be fixed and unchanged? What is it you are trying to
achieve? will this be best achieved by scanning?
