Saving email for new employee

When you change an employee, but need the new employee to have access to the
email of the former employee, is there a place to go to find out how to do
this?

Just need to change the name on the new email address>
 
This is way too cryptic to offer any specific solution. The answer now is;
depending on your mail account type you'll have to change this either at the
client or at the server.

And WHAT are you using for the mail server? Exchange, SMTP, IMAP?

If you don't care about the username that shows on the e-mail address
(i.e., you want to continue using an old account for a new user), why
not just change the Name field in the e-mail account defined in
Outlook? Of course, if you were using Exchange then your admin may
have configured that the name recorded for that mailbox will override
anything the user wants to specify. Depends on your mail setup for
which you have provided no details.
