save date in letter

When I create a letter, I insert a date that it was created. When I go back
into the letter I want to keep the date that the lette was created. However,
the date updates to current automatically. How do I turn that feature off?

Have you unchecked the box for 'Update automatically' in the date and time
dialog?
I would advise to use the Create date field, Insert - Fields - time and date
category - select create date - choose a layout and hit OK. See here for
