how do I change the default text when replying to a message and als when
replying to a post in Outlooks newsreader, Outlook Express.

What exactly do you mean by "default" text?
 
He probably means the text ""Gordon" (e-mail address removed)> wrote in
message or the text "Hans
Bootsma wrote"
