Removal Settings & Applications from a User profile

How can I remove certain applications from a Users profile that will
not allow them access them, for example if I wanted to remove Excel or
Windows Media Player, how would I do that?

Also is it possible to have no volume / sound attached to a Users
profile?

You can't remove programs from a profile, as they aren't in the "Documents
and Settings" branch where profiles are, they're under the Program Files
folder.

You can remove shortcuts from the 'All Users' profile, and put them into
individual profiles intstead. But, that won't stop savvy users from for
example navigating to 'Program Files.. Microsoft Office' and running Excel
directly.

If you have XP Pro (and NTFS) you can set permissions on the executables in
Program Files to limit who may run them. This option doesn't exist in Home,
though.

Sound? Not sure. Sound drivers are a hardware feature and therefore the
settings normally apply to all users.
