quick way to change name and reply address?

Is there a "quick" way to change name and "from address"?
ie Employee (wife!) sends e-mail on my behalf from her machine, but I sender
to appear to be me and replies to automatically come to me on receiver
clicking "reply"

I'm not quite sure I follow your question, so here is 2 thoughts.

1) Wife has two POP/SMTP accounts defined in Outlook. One is yours and the
other is hers. Hers is the default and she occasionally sends mail out as
you. After she composes the message (and also depending on version of
Outlook), it might be as simple as selecting File | Send Using and then
picking the account definition that is your account.

2) Wife has a single POP/SMTP account defined in Outlook. She is going to
send a message (will show her name/email address) but wants all replies sent
to your e-mail address. While composing a message, she can select the
options button from the toolbar. About 1/2 down there is an option to have
"replies sent to". She types in your e-mail address and okays out.
