Query to retrieve records that don't match criteria

I'm working on an employee training database. Some of the training courses
are required, so I would like to be able to query employees that have not
received the required training. Any ideas?
 
THe best way to handle this is to identify those employees that HAVE taken
the course in a query and then use that query and the employees table in an
unmatched query (use the wizard) to get those that have not yet taken the
course.


With multiple courses this gets more complex.
