query to leave something out

I have a list of Divisons (1510 total and vehicles - in the division example:
Field Ops - South - Traffic
Field Ops - East - Investigative
Field Ops - Hermitage - DUI
Field Ops - Hermitage - Traffic
Field Ops - Hermitage - Bikes
I want to run a query and pull all of Hermitage except the Bikes.
In my design view I can run a like *Hermitage* and it pulls out all of the
Hermitage, now I want to pull out all from Hermitage and leave out the Bikes,
how can I do this? Thanks
