Protecting Document Variable Fields

I have a document that contains a number of document variable fields. It is
imperative that the user not be able to edit, overtype, or otherwise delete
these fields. Is there a way to protect document variable fields against
this kind of action on the part of the user?

No, not just those fields. In all versions through 2002, you're limited to
being able to protect/unprotect sections. In protected sections, you can
insert form fields to allow user input.

In Word 2003 you could do what you describe.
