I use a canon i3000 to print on a thick sugar wafer (with food
coloring) for cakes. I would like to set the printhead back to handle
the extra thickness, but I don't know how.

For once in your life RTFM.

The manual tells me how to adjust the printhead, but it doesn't tell me
which settings, the +(plus) settings or the -(minus) settings, will make the
printhead gap larger.

On Epsons, the + indicates a bigger distance from the surface and "-"
closer. If you get good light and watch the printhead while you move the
lever from plus to minus, you should be able to see it as it moves up
and down.

On the IP3000, the setting is in the driver, "custom settings", and it's
called "prevent paper abrasion". There are several paper type selections
that automatically enable this, like envelopes. Consult your manual.
