Preserve original "Received:" headers? - exchange 2003

I am using excahnge 2003 with most settings still at their deafults.
Exchange appears to be deleting all of the "Received:" headers and then
inserting its own eg:

Microsoft Mail Internet Headers Version 2.0
Received: from mail pickup service by xxxxx.org with Microsoft SMTPSVC; Sat,
9 Oct 2004 23:30:18 +0100
Thread-Index: AcSuT45N/TJNWa3iR/KS+fZl1+lE/w==
Return-Path: <[email protected]>
Delivered-To: (e-mail address removed)

(headers cut short for brevity and munged)

How do I configure exchange to preserve to en-route "Received:" headers in
order to track down spammers?
 
Exchange should leave the original headers on it and add it's own to the
top - the lowest headers are the ones added by the other servers.

Thanks for your reply Diane. That's precisely the problem... by default it
appears to be stripping all of the preceding headers off. This makes the
tracking and reporting of spam rather difficult. One thing which I omitted
to mention is that I am using the POP3 connector to retrieve the mail from my
ISP's server so perhaps it's that which needs tweaking?

I know that the headers are intact at the time my mail leaves the server
(which I administer) at my ISP.

Yes it is the SBS2003 one, along with the version of Exchange which comes
with SBS2003
